Peanut laddoos are very delicious and healthy. You can have them as a mid-meal snack. This is a simple, easy to prepare, two-ingredient recipe which is very nutritious.

Benefits of peanut laddoos

Peanuts or groundnuts are a rich source of protein. With seven grams per ounce, peanuts have more protein than any nut. Since protein is essential for growing children, groundnuts must be included in their diet. These peanut laddoos are an excellent option as they are delicious and can be easily prepared. They contain Vitamin E, magnesium, folate, copper and arginine. They promote heart health and lower bad cholesterol levels.

The best part is you do not need to prepare any jaggery syrup. Just roast the peanuts and grind with jaggery. The oils in the peanuts and moisture of the jaggery helps to bind these laddoos. Hence no ghee is required unlike other laddoos. You can also carry them while travelling.

Tips to prepare perfect peanut laddoos

  1. Use good quality and freshly bought peanuts. They should not be rancid or bitter to taste.
  2. You can use jaggery powder also.
  3. Do not burn the peanuts while roasting.
  4. Over grinding releases oils from the peanuts. It will become peanut butter.
  5. Recipe can be doubled or tripled.
  6. Store in an air tight container. They will last for about 15 days.
  7. You can also refrigerate them for a longer shelf life.

A quick two ingredients laddoo recipe made using roasted groundnuts and jaggery.

Ingredients
1 cup=250 ml

  • Peanuts/Groundnuts – 500 g or 3 cups

  • Jaggery – 3/4 cup or as per your taste

Directions

  • Take a thick bottomed kadhai or pan. Keeping the flame between low and medium dry roast the peanuts til you start getting a pleasant aroma.
  • Peanuts should be roasted well. They should not be raw. While roasting rub a few peanuts, if the skin slips and comes easily it indicates that they are roasted. Also, taste and check a few to ensure they are roasted well.
  • Rub the peanuts between your palms to remove the skin. You can also make the laddoos with the skin. It does not affect the taste. Once done, cool the groundnuts completely.
  • Now, in a chutney jar of a mixie add equal quantities of peanuts and jaggery. Grind coarsely using the pulse option to avoid forming lumps. Keep checking the texture. Take a small portion in your hand and see if you can shape it in a laddoo. The mixture should not crumble.
  • Grind the remaining peanuts similarly, with jaggery in batches. Once done, take the entire mixture in a plate or bowl and mix well. Take a small portion, about the size of a lemon, and start shaping into laddoos.
  • Store in an air-tight container. They have a shelf life of 2 weeks.
