Green Chutney for chaats with step-by-step photos and instructions.
Green chutney is a simple and quick Indian condiment which is prepared using coriander, mint, green chillies and salt. It is very simple and easy to prepare. It is one of the 3 condiments required to prepare chaat items the others being ‘tamarind chutney’ and ‘red chutney’.
There are many variations of preparing this green chutney for chaats. As I prefer to keep the spice level in control, I have kept this chutney very basic and I am not adding any spice powders like chaat masala etc.
This makes it easier for me to add spice powders later as per individual preference. I have also not added garlic as I also prepare red chutney which has lots of garlic in it. If you won’t be preparing red chutney then I would suggest you to add a few garlic cloves.

Always use fresh coriander and mint leaves for green chutney. You can also skip mint leaves and use entirely coriander. However, mint adds a hint of freshness and is very cooling in nature.
On the contrary, you can also make this chutney using only mint. I grow mint at home and there is nothing as refreshing than plucking fresh mint. It is very easy to grow mint at home and I shall soon share a post on ‘how to grow mint at home’.

How to prepare Green Chutney?
- Wash the coriander, mint leaves and green chilli thoroughly under running water. This step is very essential since this is a no-cook recipe. There should be no dirt and mud particles. Take all the washed ingredients and salt in a blender jar.

2. Add a little water. Grind all of the above to a smooth paste.
3. Green chutney is ready. Add water to get the desired consistency. Store it in a glass jar and use it while preparing chaats.

1 cup = 250 ml
Coriander – 2 cups
Mint leaves – 1 cup
Green chillies – 2 nos.
Salt – 1/4 tsp
Water – as required

Notes
- Use fresh coriander and mint leaves for a flavoursome chutney.
- Add water to get a medium dropping consistency. Do not make it too watery or runny. This will turn your chaat soggy.
- Store in a glass jar to retain freshness for longer.
- This chutney has a shelf life of about a week when refrigerated.
