Hello all..it’s almost been a while since I posted on nayakskitchen. Many things have happened since last year.
I am now a certified nutrition and fitness coach from INFS (Pune).
I also did my certification in pregnancy and postpartum nutrition and fitness.
Completed 200 hrs Yoga Teacher Training Course and
got certified as a yoga instructor. 🧘🏻‍♀️

Raw Jackfruit Biryani | Kathal Biryani | Panasakaya Biryani
🍈🍈🥘🥘
Raw jackfruit biryani is a vegetarian variant of chicken biryani as the succulent jackfruit pieces emulate the texture of meat.
Tender jackfruit is marinated with curd, ginger-garlic paste, mint leaves and spice powders. The marinated jackfruit pieces are cooked and then the biryani is layered alternatively with cooked basmati rice, jackfruit pieces, mint leaves and birista (fried onions). 🌰🌰
This layered biryani is then 'cooked on dum' to infuse the flavours.

Chaako | Raw Jackfruit Sabzi | Pansachi Bhaji
Goan-style raw jackfruit recipe. 🍈🍈
Chaako is a raw jackfruit recipe wherein raw jackfruit is steamed first and then tossed in a tempering of mustard seeds, green and dry red chillies and hing. This is stir fried and finally grated coconut, jaggery and salt are added towards the end.
Although this recipe makes no use of spices or masala powders it tastes really flavourful.
This vegan stir fry recipe has simple flavours and can be served with hot steamed rice or even rotis or chapatis.

Summers are times for jackfruits and mangoes..

Most of us relish a ripe jackfruit. However there are many traditional recipes that use raw tender jackfruit as a key ingredient.
Raw jackfruit is called ‘Kuvlo’ or ‘Chaako’ in Konkani.

The problem why most of us do not try our hands on raw jackfruit is because of the cleaning process.
Cutting a raw jackfruit is very cumbersome and messy.

The sap (called deekh in Konkani) is pretty annoying and it seems not to leave once it clings to something.
However you can make the process easy if you have the right tools and techniques.

With some practice it will no longer look like a daunting task.
